The Ultimate Ginger Cookies

Crisp on the outside, chewy on the inside, the spices in these cookies kind of hit you in waves, none overpowering the others, with a distinct, almost smoky hit of molasses, and then it finishes off with the slightest heat from the chunks of crystallized ginger. And the way the house smells when they are baking. . .sigh. . .I am telling you, they will make you sass yo mama!

[Long ago in a land far far away, a dear (and beautiful) friend of mine and I used to make tea and socialize every week. All these many years later, how I long to return to that simpler time, there with her, sipping tea on the couch. I took this picture today as my "Tea for Tuesday" cyber shout out tribute to her. Cheers!]

Cheers to you too, dear friend. Weren't those the days? Discovery filled, conquer the world, unlimited possibilities, unlimited faith in ourselves--those were such rich days. I miss it.

Thanks for taking me back. Btw, you have a lovely tea set. And, the spice cookies are a divine accompaniment to a strong cuppa tea.

yeah, technically it is a German coffee service (left to me by Gloria). I both love and despise it. It seems charming enough, but also completely not who I am (and also kind of haunted)...so I vacillate between wanting to hang on to it for some event in the future (which is always my hoarding instinct, when it comes to beautiful things), and posting it on ebay just to rid myself of the clutter. Who knows?
